At the University of North Florida in the Department of Nutrition and Dietetics, we are conducting research investigating the effects of fermented vegetables on the microbiome and heart health. Although previous data support a connection between the gut microflora and cardiovascular disease, it is not clear whether consumption of fermented vegetables can prevent cardiovascular disease by modulation of the gut microflora.

We are seeking men and women ages 35-64. Vegetables will be given free of charge and $120 in gift cards will be provided!
